Sheet Pan Shrimp Fajitas


Fajitas are fast & simple with the sheet pan dinner recipe! Using Trader Joe’s Chile Lime Seasoning, this meal is full of flavor!

Ingredients

  • 1 lb. peeled/cooked/tail off shrimp (thawed and rinsed)

  • juice of 3 limes

  • 2+ Tbsp chile lime seasoning (I love Trader Joe’s)

  • 1 tsp. minced garlic

  • handful of chopped cilantro

  • 1 red onion sliced

  • 2 bell peppers, sliced

  • 1 package sliced mushrooms

  • 2 tomatoes sliced or diced

  • olive oil (for drizzling)


Directions

  1. Preheat oven to 400.

  2. Add lime juice, 1 Tbsp chile lime seasoning, garlic, and cilantro to shrimp.

  3. Cover and allow to marinate for at least 30 minutes in the refrigerator.

  4. Meanwhile add red onion, peppers, mushrooms, and tomatoes to a sheet pan. sprinkle with 1 Tbsp chile lime seasoning. Drizzle with olive oil.

  5. Bake for 15 minutes.

  6. Add shrimp and marinade to sheet pan. Bake for an additional 5 minutes (until shrimp is hot).

  7. Serve immediately with warmed tortillas and traditional toppings (salsa, avocado, shredded cheese, lettuce/cabbage, sour cream, etc.)
